Your Preferred Way to Cook Eggs?

I used to do hard boiled thinking it was the best way to minimize calories from oil, but lately I have gone back to scrambling in the pan with extra virgin olive and a slice of low fat cheese, tastes oh so good. Just hoping it is not clogging the arteries too much.

It’s not.

For me, I’ve been into whatever’s easiest/fastest/least thinking involved. Steam-basted (above) is the choice if I want runny yolks. Basic idea:

But I usually use bacon fat instead of butter, crack the eggs right into the pan, and use more eggs (duh) and more water.

Otherwise it’s a quick frittata: Preheat oven 350ish and get a pan hot on a burner, toss a fistful of veggies into pan, mix eggs and 1 tsp of fat-free sour cream in a bowl while veg cooks, pour egg mix in the pan, count to 20 then throw the pan in the oven for about 10 minutes.

I’m a big fried egg guy! Usually have 4 eggs fried in a tablespoon of EVO as part of my last meal of the day. I like to save quite a bit of my fat for the day for my last meal, it seems to keep my satiated

Fry some chopped onion, mushrooms and bacon in grass-fed butter (Kerrygold) for a few minutes or until the bacon is crispy. Lower the heat, then add three beaten eggs and cook, stirring frequently, until it resembles a scramble. I let it cook until the egg starts to brown. Season with plenty of salt and black and white pepper and serve on buttered toast.

Alternatively, omit the bacon (optional of course) and substitute the butter for sesame oil. Once the onions and mushrooms (you could add crushed garlic too) are cooked, lower the heat a notch and add about 2 cups of cold cooked rice (I actually prefer wholegrain basmati). Stir for a minute to break it up and dry out slightly, then add three beaten eggs. Stir frequently until cooked, then season with salt and pepper (I also like to add cumin).

Mostly however, I like my eggs cooked as part of cakes and cookies, as I have an horrendous sweet tooth.

Scrambled with green peppers, onions and sriracha is how I eat my eggs every morning. I have been doing it for years and it still never gets old.

Currently on most days:
Fry crumbled chicken sausage, peppers, onions, and tomatoes. Mix in a bowl with 7 egg whites and one yolk. Make an enormous omelet with lowfat shredded cheese.

I used to make a GREAT breakfast pizza I got from Food Network made with:
8 eggs
1 onion
1 package frozen spinach
1 Boboli
cheddar cheese
olive oil

Obviously that’s not all for me.

chorizo, jalapeno, red pepper, onion, and 4-5 eggs scrambled. yum.

I loves me some poached eggs.

Also a fan of what we call “Russian eggs” here: hard-boiled eggs, halved, yolk removed and mixed with a fat (mayonaise or butter) and paprika, yolk hole filled with the mixture and then topped with caviar. Heaven in mouth.

Since my kitchen in Bangkok consists of a microwave, I beat 5 in a bowl and nuke them into scrambledom. The eggs here are surprisingly exquisite, you cannot find low quality here. Big, bright orange yolks behind robust brown shells. Combine that with size ZERO (massive) and you have a bowl of awesome.


Home made egg McMuffins are killer.

Fry up 2 with runny yolks, while toasting an English muffin. I prefer sourdough. Plop down an egg on the muffin, top with a thick slice of cheddar - sharp is the only real option - another egg, another slice of cheese, close it up with the remaining half of the muffin and crush that fucker into oblivion.

I usually have two at a time. El Pato AKA Duck Sauce is over the top tasty on these.

Scrambled with blue cheese and spinach is my current breakfast. Either that or boiled eggs if I forget to take the spinach out the freezer the night before.

Like this ^ except instead of olive oil I use butter and milk. Instead of one slice of low fat cheese I use a handful of regular shredded cheese. I also add salt. Other than my recipe adding an extra 20g of fat and 300 more cals. they are essentially the same - lol.

Nice pic!! Definitely trying it this weekend. I already found an Eastern European imports store in my city to get the caviar from.

I generally pack a salad in my lunch where I like to throw in a couple of chopped hard boiled eggs.

Add your favourite dressing

A favorite of mine is to just scramble as many eggs or liquid whites (I tend to buy a lot of these in bulk for convenience sake) as I can fit in a pan with onions, peppers, diced turkey pepperoni, and some shredded ‘Mexican’ blend cheese.

Serve with a side of oatmeal with some banana Met Drive and Almond Butter mixed in, and some kona coffee with a splash of sugar free french vanilla creamer and I’m a very happy camper.

I like to do 7 eggs over-hard and put some sriracha on them.

I loooooove eggs.

During the week I boil 5 eggs and take them to work for my first meal at 11:30am.
On Sundays after the gym I go to an all-you-can-eat breakfast and eat the equivalent of 20 eggs(plus bacon, mushrooms and hash browns) in the form of scrambled.
