V-Diet Muffins

Here is the current (updated) recipe for the V-Diet muffins mentioned in Gustavopacho’s Physique Clinic thread. With a better picture than my original lump.

Note: they do come out a bit dry, and take a while to eat. Which is nice when you are having trouble with constant protein shakes.

Chocolate brownie (Shugart-approved)
2 scoops Chocolate Metabolic Drive
1 serving (2 tbsp) flax meal
1 tbsp natural peanut butter
1/2 cup water
kCal 360
fat 16
carb 15
protein 48
fiber 8

Banana bread (Shugart-approved)
2 scoops banana Metabolic Drive
1 serving (2 tbsp) flax meal
1 tbsp natural peanut butter
1/2 cup water
kCal 360
fat 16
carb 15
protein 48
fiber 8

Vanilla cinnamon (yes, I know coconut oil is not on the V-Diet. I use it in place of peanut butter some times)
2 scoops vanilla Metabolic Drive
1 serving (2 tbsp) flax meal
1 tbsp coconut oil
1 tbsp cinnamon
1/2 cup water
kCal 400
fat 21.5
carb 17
protein 44
fiber 10

For any of the flavors:
Mix all ingredients.
Bake for about 8 minutes at 325 F.

I cook these in a mini-muffin tin (each cup holds 1.5 tbsp).
Each batch makes 6 mini-muffins.

Excellent dude!! I'll have to try one of these soon.

Wow… I’m on day 3, sipping on my second shake of the day, and those look SO good right now. Thanks!

Do these work with the V-Diet. I mean it seems to go against the whole liquid only basis of the V-Diet. Will it work against it psychologically or physically?

I’m not on the V-Diet, but I’m always looking for new muchies. These look good. I don’t have a muffin pan, so I may try a loaf. I’ll let you know how it goes.

Hmm… it would not technically be “breaking” the V-Diet, as long as it’s within your caloric range.

And goddamn, do they look good - I’m on day 27 myself - but I question it from a psychological point of view - breaking habits - I know that muffins are generally a “trigger” food for me personally - not something I want to get into the habit of eating, just for the force of habit. That’s me though.

Wakiki

I generally don’t have much of a problem with muffins, again there sweet and sweet + me = no bueno. However, i would eat these once-twice a day on a V-Diet if I could, however I just don’t wanna mess up the psychological impact.

Not a v-diet muffin, just a low carb one. A good one to know for those on a low carb diet. Maybe during your transition off. Posted on AD thread awhile ago, but I love the convenience of it (and all that fiber!).

4 tablespoons flax meal
1 teaspoon splenda (more or less to taste)
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1 teaspoon butter
1 egg

Put dry ingredients in a cup, mix it up. Mix in egg and butter. Put in microwave on high for 1min and presto, done. ~250 calories, ~1 g of carb, 20g of mostly healthy fats, 12g of protein and 8g of fiber.

I’m not sure if the butter is actually necessary, but I’ve always kept it in there.

I often down one of these along with a protein shake for a quick 5 min breakfast.

Shugart himself approved of the muffins, provided you don’t exceed your calorie range for the day. Physically, there are no problems using them on the V-diet. Psychologically, it depends upon how bad your munching habits were.

My wife and I are not “munchy” people at all, do not have sweet tooths. So we did not have to worry about breaking such habits. But chewing on the muffins feels good, and it also takes much longer to consume them than a shake. So the “meal” lasts longer. Plus, they are tasty.

I have actually fed the muffins to my non-supplement consuming friends without telling them what the ingredients were. Everyone liked them, and thought I just had made regular (ie–bad for you) muffins.

I thought cooking with Metabolic Drive changed it to make some of the protein unuseable? I remember reading that in a lot of the other recipe’s that used protein shake powder as ingredients. Is that not true with Metabolic Drive? Also this is the Low-Carb version correct?

Thanks!

Essentially its just skimping on the water in the shakes and then throwing them into the oven, yes?

The only problem I see is what others have mentioned with the food/taste changes occuring since you can eat more often and dont set the healthy meal in as a reward.

Yes, this is the Low-Carb Metabolic Drive. The V-diet does not use Metabolic Drive Complete.

Denaturing of the protein is not much of a worry. First of, 325F for 10 minutes will not harm the protein very much. And most proteins reverse the denaturing effects when they are removed from the source of change. In normal terms, heat makes the protein change shape. Take away the heat, and they go back to normal.

The more concentrated the protein is in solution, the less effect heat has. For a study: DEFINE_ME
In the study, they used different concentrations of evaporated skim milk (whey protein), and heated the solutions. The most concentrated solution (39% whey) had the least amount of denaturation.

Overall, don’t worry about the possible loss of a minor amount of the protein bio-availability due to heat denaturation. Such a small change will not cause negative effects

Skimping on the water, adding some fats, and then baking. Yes.

Again, the psychological factors are different based upon your goals. If you want or need to change your eating habits, then the muffins could retard your progress. However, if your eating habits are not an issue, then the muffins will not harm you.

Personally, I would recommend that V-dieting people NOT eat the muffins until the recovery weeks. The mental changes from the v-diet cannot be over emphasized. The main reason my wife and I started having the muffins during the diet is that she started having physical issues with digesting the shakes after about three weeks, and the muffins helped alleviate that.

Ok, well I had one. It was a nice change, however I can’t make them at my dorm so it’s prolly only this weekend that I will have one.

Great point there Daven. I decided to eat the muffins only on Day 24 (the 4th week on the V-Diet) just to make sure my taste and food behavior changes were cemented in. I didn’t want to take a chance any earlier when I was craving to chew something. Chris pointed that out and waiting till later on in the program was a smart move if I wanted to gain the full potential of the V-Diet!

Thanks again for the recipe Daven, those muffins are a real reward for me on week 4. Take care!
