Unrefrigerated Eggs/Health Hazard?

Are there any health concerns with
NOT refrigerating eggs?

I am asking becuase I have been buying large quantities(there cheap) and don’t always have enough room in the fridge.

Should I be concerned?

They are a food product. Yes, you should be concerned.

I buy my eggs at the supermarket. They are not refrigerated there. So I wouldn’t sweat it.

Then again, we actually have the best-before date printed on the egg itself.

I think as long as you’re not stockpiling six months in the basement, you’ll be alright.

You also have to trust that there are no microfractures in the shell. I personally wouldn’t take the risk. I have had food poisoning once before and I would like to avoid that for the rest of my life. Most eggs are refrigerated here. I go to the grocery store almost every other day. There is no way I could stock enough food in the one fridge I have to last me for weeks.

I usually buy a weeks worth at once.

Is that long enough exposure to create a problem?

Keep eating them.

When you get food poisoning, please post your pictures again in the women’s section of the forum.

See if anyone notices the difference from your last posts.

Is it possible that an egg could go bad in that time without refrigeration? Yes. Will it happen? My magic eight ball says, “she likes you”.

My supermarket doesn’t fridge them either but on the boxes of the ones i buy it does say store in fridge. Reckon you best off making space and storing them there.

HANDLING
Wash hands
Use only clean, uncracked eggs
Use clean, sanitized utensils and equipment

PREPARATION
Cook eggs thoroughly
Hold cold egg dishes below 40?F
Hold hot egg dishes above 140?F
Never leave egg dishes at room temperature more than 1 hour
(including preparation and service)

All that said, a friend of mine gets free range eggs form her chickens and she collects them in a basket. She never refrigerates. Back in the day, nobody did. But not everyone has access to free range eggs; I’d guess that most all of us use factory raised. So it’s safer to refrigerate.

Thanks for the link. Pretty good info; however, “free range” doesn’t imply “safe” and “Factory raised” does not mean inherently unsafe.
Eggs are fine without refrigeration for a week. If they have microcracks, prof, they’re not safe in fridge either.

With an infection rate of 1 in 20,000, you’re running favorable odds on safety.

Touche’. You are right.

I eat raw eggs, too. As for salmonella poisoning, that is on the egg shell, so, like you said, odds are favorable. :slight_smile:

in france they do not refridgerate them. i was there 5 weeks and that was one of the differences i noticed. when we came i stopped putting mine in the fridge with no problems going on roughly a year and i eat them pretty regularly.

France?!

That’s it. From now on I’m putting the eggs in the 'fridge and leaving the milk out…

If I were to judge how safe the same egg is with a crack inside or outside of the fridge, I would take my chances with the one inside of the fridge (less growth of bacteria). Eating raw eggs also decreases the amount of available protein. Cooking releases bound protein meaning there is no reason to eat them raw.

Raw eggs - mate that sucks - my omlettes are just about edible. What do you do just knock back 12 or so raw eggs - sicko!
I find eggs to be a real pain in the ass for the amount of protein you get from them, although occasionally during the week i do my omlette and always scramble a dozen for brekkie at the weekends, still hate the bloody things, poking the yolks down the sink and trying to get bits of shell out of the pan!
