If you soak the oats in water overnight, it will significantly reduce the cooking time.

All I know is steel cut oats give me ridiculous gas. I swtiched to them for a while, but after a while started noticing Id have abdominal cramping and gas about 2 hours after breakfast. I took them out, and went back to rolled oats and Ive been fine since. Hopefully that wont be the case for you though.[/quote]
That’s interesting that there was a difference “gas wise” between steel cut and rolled for you. I use digestive enzymes with some of my meals so I’m not really worried about it, plus nothing can really top the massive amounts of broccoli, garlic, and onions I consume and their “effects”.

I am breaking out of paleo mode for a couple months to pack on some pounds, and wanted to know what peoples thoughts were on oats. I know there isn’t a huge difference between steel cut and rolled, but what are peoples thoughts? Does one keep blood sugar levels lower than the other? Is one healthier?
I am leaning towards steel cut, because most of my reading has stated that they are the less processed version, and the name steel cut sounds way more manly.

Steel cut is less processed, which could be arguably more healthy but I really don’t think you would know the difference. Honestly, I like it better texture and taste wise, so that’s why I would eat steel cut over rolled oats.
WestCoast,
have you considered bulking on paleo(ish) diet?

I have, and ultimately I realized I have to get carbs (other than fruits/veggies) back into my diet. That is why I am utilizing steel cut oats, quinoa, and certain rices. I figured if I am going to bring some carbs back in, I might as well use the healthiest, most natural kinds.
Sounds good, man.
I’ve only been on paleo(ish) diet for 3 months but I can safely say I’ve never felt better in my life.
Dropped a few pounds so my abs are showing again and basically feel awesome all the time.
My diet consist 95% of beef, chicken, eggs, fish, whey/casein, vegetables, bananas, apples, almonds and sometimes cheese.
Sometimes I’ll eat some grain based food if the situations offers itself but very rarely.
I don’t know how much food you have to eat in order to pack on some pounds though but I’ll definitely try to add some lean mass while eating like this later on.
But I don’t see myself adding oats and rice etc back in my diet anytime soon since I’m thriving like crazy without them. I’ve honestly never felt or looked better in my life.

It’s the best way to eat, I’m glad you found it.
Yes, I’m beginning to realize that fact.
I’ve been fairly low carb for years but always have had oats, rice, bread, pasta as my carb sources and been doing well limiting them but then I read about this crazy paleo diet where you would start eating like the first humans did and I thought it made a lot of sense.
And here we are.
