Spinach with crasins is great. Vinaigrette and cheese or nuts on top.
Sometimes I think about all the different things that taste good together, and lo and behold are nutritionally complementary/beneficial at the same time. It’s cool, like nature considers our taste buds as well as our nutritional needs.

Fresh basil, dijon or honey dijon mustard, EVOO, balsamic, S&P. Stick in food processor until blended. (Go easy on the vinegar.) Lightly toss w/spinach, crasins, pine nuts and a few carrot gratings. I pinched this recipe from a restaurant a few weeks ago and I think it’s pretty accurate. It’s a very pretty salad due to all the colors, too, very Christmasy.
My uncle, a chef, also makes a spinach salad with pine nuts and caramelized onions and I think little slices of mandarin oranges. That’s also very tasty. Pine nuts seem to complement spinach perfectly.
