Lately I’ve been cooking a lot of soup. It’s easy, cheap, delicious, and healthy. There are an infinite number of variations but here is my most recent.
8 Quarts Water
2-3 Frozen Chicken Breasts

1 lb Dried Mixed Beans - Trader Joe’s 17 Bean and Barley Mix
2 tbs Chicken Base - http://www.samsclub.com/shopping/navigate.do?dest=5&item=183004
Italian Seasoning
Salt
Pepper
Olive Oil
Two Steps:

Rehydrate and drain the beans according to the package

Add everything to the pot, bring to a boil, cover and simmer for an hour. Done.
I don’t bother to cut the chicken before I put it in the pot, after boiling for an hour it basically falls apart with the serving spoon. You now have 8-10 meals and a total cost of around $8. I don’t measure the seasoning and I go very easy on the salt and add that while I’m eating it.
I also make a good chili but am still working on the recipe. If you have something similar you do please share.
