'Skin' on Turkey Sausage Links

Does anyone eat these? When I do eggs, I cook one of these and then throw in my eggs and shit to cook in the delicious grease and become one with the sausage…

However, I ALWAYS cut off the “skin” shit from the link and empty the contents of the “skin” into my frying pan. This is becoming a pain in my ass and I’m wondering if I can leave that skin on there and just chop up the link with my spatula?

Skin safe to eat? Disgusting? Let me know. I’m poor so “experiments” be damned…

Safe to eat? What are you worried about specifically?

I think almost all sausage casings are made from collagen nowadays, which would up the protein content a tiny bit (probably not very bioavailable).

I often eat turkey bacon. It’s leaner and I enjoy it more. Maybe if you’re worried try it instead.

I cut along the sausage and empty it out as well. But to be honest, I kind of like making little turkey meatballs and dropping them in.
