Shirataki Noodles

I tried some shirataki noodles tonight – I highly recommend them. They have a “fishy” smell right out of the package, but are utterly tasteless. I tasted them before and after rinsing with water and could not taste a difference. I made sauce (Classico roasted garlic out of a jar) with onions, garlic, mushrooms and hamburger. Once the sauce was ready, I stirred in the noodles. The texture is a little different than regular spaghetti, but so close you won’t notice a difference.

Less than 1 gram of carb per pack, and listed as zero calories. Very cool stuff. I also tried a variant that looked “seasoned.” The noodles where brown with dark flecks in them. This turned out to be seaweed. These did have a subtle “fishy”/seaweed taste that I did not like. The seaweed version had 5 calories per pack.

Do you think they really are Calorie free, or just a trace amount for that severing size? I’d go with trace amount. No sense eating bag fulls of the stuff and not expect to get fat!

When I was low-carbing a couple years back, these were highly recommended. Spaghetti squash is another good pasta alternative.

So if they aren’t carbs, what are they? How much fiber is listed?

Should I assume that its a long strand of indigestability, and your poop is going to be really stringy later?

The packs I have say “Shirataki (Yam Noodle)”

No fiber listed.

Net weight is 7 oz (198 g), but the noodles are suspended in a solution – most of the package weight appears to be water.

Nutritional information on the pack says:

Calories: 0
Fat: 0
Sodium: 0
Total carb: Less than 1 g
Protein: 0 g

Ingredients: purified water, yam flour, hydrated lime.

According to this site (All Products: Miracle Noodle, Miracle Rice, Vinegar), it is made of glucomannan – a water soluble fiber. Not really sure what the difference between the noodle at this site is from what I bought locally (at an oriental supermarket). Cost me $1.40 locally.

No ill effects in 24 hours for 2 people. We ate two bags of the stuff.
