So I make some oatmeal and let it cool to increase the resistant starch content before I eat it. Or, I make overnight oats and eat them cold. Or I eat the oats nice and hot to warm me up. In any case, don’t the oats get to body temperature and thus contain the same amount of resistant starch?

Re-heating does not undo the change that has already occurred. Hope that makes sense.

Just take a TBSP or 2 of Bob’s Red Mill unmodified potato starch. It’s almost pure resistant starch.
need to combine it with psyllium for it to be really effective.
