Cows can be slaughtered at any time so it depends on the breed and how old they are. Generally though, most feeder steers get slaughtered when they’re about 800 to 1000 pounds live weight.
Between 40 and 60% of that weight is offal, hide, head and hooves so you usually end up with 300 to 500 pounds of meat. That’s just a rough guess though. The breed and genetics make a huge difference.
It’s really hard to get cattle to gain appreciable amounts of weight on grass feed. Most companies that offer grass fed beef actually raise them on grain based feeds, and then once they have gained enough weight to make some money off of, then they feed them grass for a while before slaughter.
