After every time hitting the top reps (5x3-5, 4x6-8) before upping the weights, deload for that particular lift for one week and then build up again

Personally I deload every 8-12 weeks. Just depends on my body is feeling. Usually after 8 weeks of heavy lifting I start feeling the effects from it. This is one way of doing it:

Deadlift
Week 1 - 225 @ 5,5,5,5,5
Week 2 - 235 @ 5,5,4,4,4
Week 3 - 235 @ 5,5,5,5,4
Week 4 - 235 @ 5,5,5,5,5
Week 5 - 245 @ 5,5,3,3,3
Week 6 - 245 @ 5,5,5,4,4
Week 7 - 245 @ 5,5,5,5,5
Deload the deadlift (maybe do 205 @ 5x5)
Week 8 - 255 @ 5,3,3,3,3…

Yup, probably time for this next week.
