I was thinking of trying to bake up a batch of breakfast bar type thingies using oatmeal and maybe some fruit. It seems some sort of oil is typically used to keep things together. The problem is I’m trying to avoid fat in the recipe.
Anyone know of a supstitute for oil that’ll help keep the ingredients intact?
I was thinking maybe egg whites or maybe some sort of fruit puree.
Anyone ever tried something like this in the past?
I have used unsweetened applesauce as a substitute for vegetable oil in bread recipes. It worked ok, although as I recall the texture was slightly rubbery compared to using oil. Other fruit purees are supposed to work too, though I haven’t tried them.
That sounds pretty good. There are recipes online for things that you can make from healthy ingredients (including your high-grade whey protein) that has other ingredients like applesauce and other ways of “thickening it”.
Just google for “homemade protein bar” or “energy bar” and you’ll find some good stuff. They were all pretty easy to make and apparently they taste pretty good. I haven’t tried them yet but I’m gonna.
