This guy did have a seizure… he is lucky he lived through this barbaric act… I am a paramedic and this clearly shows him in a tonic/clonic state… while lying flat on his back he was “Posturing” hand drawn up toward his body with clinched fist… neuro damage for sure… hope he sought medical eval

You’re right though, crazy usually wins against the average guy. So does throwing the first punch. Against a boxer of comparable size who had a bit of space to maneouvre though, your strategy might be found lacking.
I just watched that last fight video. Whatever happened to sportsmanship? I always thought a fight was over when a fellow was knocked down, unless he got back up to fight some more.
As someone who is interested in training for self defense, what kind of fighting styles would you guys suggest?

If you’re serious about your stated goal of training “for self defense”, do yourself a favor, do NOT go looking for an Aikido school to begin. Just as a general rule also, when people speak of “softer” styles, they are probably referring to something that does not lend itself well to physical defense.
I’ve spent some time in Aikido classes, and I’ve enjoyed it, but the only useful things I really learned were 1) the ability to fall down properly and on-cue, and 2) how to retain my dignity while wearing poofy pants.
For realistic self defense training, you might start with Judo or Brazilian Jiu-Jitsu. Boxing is a good choice, and any of those should be available in your nearest metropolitan area.

The easiest way to defeat a pro MMA fighter in a street fight would simply be to use tactics that weren’t allowed in his sport. Since he wouldn’t have any training experience in those tactics, you would automatically level the playing field.
Considering the MMA orgs to be “real fighting” is equivalent to thinking that Hollywood movies depict violence (and it’s aftermath) the way it appears in real life. If you think that’s true then I suggest you head over to Ogrish.com sometime and bring a bucket
