Low-Carb Pancakes: Brancakes!

I have been on a low-carb diet for months, and I have had some serious pancake cravings.

All is well now; I have discovered brancakes. Now, I need to find a source for sugar free syrup and I will have perfected my brancake experience, and will exist in a state of imperturbable contentment until the end of my days. There is no need to thank me for bringing you brancakes, your gratitude is understood.

1.5 cups oat bran
stevia
1.5 tsp baking powder
0.5 tsp salt
1.5 cups milk
3 Tbsp butter
2 eggs
0.5 tsp vanilla

I used to make mine with:
Vanilla protein powder
Almond flour
Egg
Splenda
Baking powder
Cinnamon

I would occasionally add some vanilla essence too.

Cooked in a tiny bit of olive oil.

Would serve up as a stack sprinked with spelnda and drizzled in calorie free syrup… or simply sprinkle in sugar, wrap up in a kitchen towel and head out on my bike to lectures.

Can’t remember the quantities however!

Carbs were very low, high protein, plenty of fiber, a decent serving of quality fats.

Taste was good - I liked the slight nuttiness from the almonds… texture was fairly good although almond flour isnt the finest grain in the world.

I need to look into almond flour, I did not know such a thing existed.
