I suppose. Problem is, is she is a very good cook so its hard to impress her with my cooking. This is why I rely on you steely!

While that works most of the time, I have to show I’m capable of feeding myself/her on occasion with something other then going to a restaurant. This is where you have been a huge help (cooked quite a few of the things you’ve put forth and they’ve been awesome). I tried the fritata thing but I messed up somewhere cause it didn’t taste that good (and I love all the ingredients in it). I’m thinking maybe I burned it a bit or something. Breakfast pron!

Lamb Shoulder Chops and Candy Mint Sauce

So, I’ve had some PM requests for lamb recipes, plus T-Nation’s own Ct. Rockula, weightlifter of the dead, has made repeated requests, so here goes!

Real simple, real fast.

I had a couple bags of “Dainty Mints” left over from Thanksgiving, so I got creative.

You need some lamb cuts. Preferrably some chops that lend themselves to sauteeing (ie. flat-ish cut). Small chops are fine. This is a .7 lb shoulder chop.

Virgin Light Olive Oil
Chives
Garlic (and or garlic powder)
Dainty Mints (like the kind in the restaurant)
Half and Half (or Heavy Cream, or Whole Milk is OK)
Crushed Rosemary (opt)
Crushed Tarragon (opt)
Salt

Here’s the Dainty Mints. Love these things. We’ll come back to these.

Here’s the seasoned chop.

Sauteeing the chop on medium in Light Virgin Olive Oil with chives (and chopped garlic if you want).

Keep the chop and chives moving. You want it seared/browned but not burnt.

At this time, preheat oven to 400F.

Flip 'er over!


Place in baking pan or dish on top of chives and olive oil.

No need to cover.

This should bake 10 minutes or so, maybe longer if you like it more done.

Things are lookin’ damn good there. Just curious, in the past pic you posted, is that an iron skillet or one of those non-stick skillets? I am debating about getting one and hear they are great.
