Hummus and Chick Peas

I was looking through the net for low gi foods and saw that Hummus has a gi of 6 while chickpeas have a gi of 42, why is that? Hummus is made out of chickpeas and it is mashed would this not cause blood sugar to rise more?

That there in lies the problem of the glycemic index.
It doesn’t take into account when you eat more than just one food at a time.

Is it that it is just mixed with other foods or that it is mixed with fats (olive oil)?

the hummus i get is really good - 6g of fat, only 0.5 being saturated, and 3g of carbs, 1 being fiber in 2 tablespoons. so it really doesn’t affect carb intake unless your gonna OD on it.

Carbs typically have a lower GI when mixed with fats. That is why eating an apple with some peanut butter is better for blood sugar than just eating the apple.

The chick peas in hummus are very diluted too, and I am pretty sure a serving size of hummus (a tablespoon or two) is considerably less than a serving size of chick peas.

Hummus doesn’t get much mention, but it is a great BB food.

Just thought I’d throw that out there.

IT has tahini oil in it and other things. Could be one of them that causes the spike in GI
