It tastes a lot like beef. But the texture is different. At least the last time I had it, it was softer than ground beef. Which is a weird way to describe meat, but it was.

Buffalo rocks.
When I lived in New York state, it was much more accessible (although I have managed to find a source or two around me now) and I used to eat it all the time. See if you can get a hold of some buffalo steaks. They’re leaner than chicken, and taste good, too.
Buffalo tends to have a slightly different taste and consistency than beef, and is usually a good bit leaner.
Well I cooked it up, and it was pretty damn good. I really didnt season it too much and it still had a great taste. You guys were right, the texture was a little different.
All in all, I will probably try to throw it in a meal once a week, cause I like the macronutrient breakdown(and it throws a little something different into the mix). Its pricier than beef, chicken, and turkey. I purchased it for 3.98 a lb.
3.98 a pound is actually not bad for ground buffalo. Ive seen ground beef go for 4.99 a pound where I am so you could imagine what ground buffalo could for. Of course I live in the desert though. I would eat it all the time if I could.
