I must be a lot different than everyone because I keep reading about how a high fat and protein diet is really satisfying and fills you up. I feel the exact opposite. I can stuff my face with 24 oz steak and 16oz of whole milk and I’m still hungry. My hunger gets satisfied with carbs so much more easily. Like I said before, 4000 cals on protein and fat feels like 3,000 calories on my old diet.

No you arent alone, I am exactly the same as you. You will probably find that meals with some carbs will provide an immediate satiating effect, making you feel full and satisfied. Possibly due to serotonin.
I can very easily overeat meals that are just Pro and Fat. Fat has pretty poor immediate satiation, but when it reaches the gut, things alter slightly. Meals that contain decent amounts of protein and fat initiate the secretion of CCK when in the duodenum. The net result is that gastric emptying is delayed, for some, this blunts hunger between meals. For me, jack shit. And in fact, on occasion, I would become nauseous and really quite irritable.
For years I tried the whole low carb diet thing. I did get leaner doing this, but the increase in disatisfaction was horrific. When dieting down with carbs I find that I remain much more satisified, have much less cravings and are much nicer person to be around.
Different strokes for different folks.
I’ve been pretty happy on low carbs by adding flax meal muffins and brownies to my diet (baked with no flour, and with sugar substitutes). They add a lot of fiber to your diet, and I don’t feel like I’m missing out on bread and deserts. I also like the ‘miracle noodles’ (recent thread here) as a substitute for pasta. I also eat a lot of fibrous green vegetables, cauliflour, and salads (i skip the lettuce and go crazy with tomatoes, peppers, mushrooms etc etc)… not necessarily for the fiber (many vegetables are overrated on that count) but because they are filling. You’re going to get a small amount of carbs with this type of diet… 2 cups of green vegetables have about a dozen carbs. The milk you put in your morning coffee has a few carbs. Salad dressing has a few, etc.
