Ribs and tater salad
Tried the new cookie recipe. Edible but not as good as the cake mix ones. These taste more like little cakes than cookies.
The batter was TOO dry. I added a couple of tablespoons of milk but it didn’t help the end product. Anyway,

Hit the comfort food hard this weekend.

Homemade meatloaf, homemade mac and cheese, token vegetables. Yes, ketchup on the mac 'n cheese and meatloaf because I’m not above eating like a 9-year old sometimes.
Popped some popcorn afterwards. 1/2 cup of kernels made about 6 cups. Not pictured - melted butter, kosher salt, cayenne powder.

Worst. Sous chef. Ever.

Jamie Oliver put a quick few programs together based around what we have in our cupboards and freezers. He really is a good cook that feller. Here’s his fish pie from yesterday. The sauce has carrots, onions, spinach and a tiny bit of garlic, flour and then milk from the poached fish. The topping is mashed potatoes and peas with butter and grated cheese. This is glorious comfort food.
What did you put into your meatloaf? I want to try and make my own, but have no experience with that.
It’s (basically) a giant rectangular baked meatball.
I did 3 1/2 pounds of ground beef, panko breadcrumbs, 2 eggs, dried parsley, dried oregano, garlic powder, salt, black pepper, and one diced caramelized onion.
Cooked for 400 or so American-degrees for about an hour. I tend to make a shorter, wider loaf instead of a taller “loaf of bread”/classic meatloaf shape. I think that may help the cooking time.

Normal dinner for me. Chicken thigh, steamed broccoli, salad, some broccoli tots I stole from my son. Due to quarantine there’s not much demand for a private chef. I also just moved so the kitchen is still half in boxes, so no fancy cooking.
Little guy wanted to show off his lunch. Tomatoes, eggs, nectarines, and pork terrine that didn’t quite come together like I wanted.
That’s awesome! It has all the good colors.
We had roast ham for Sunday lunch so made a chicken, ham and leek pie from the leftovers. It was top class.
