Hit a cool new restaurant last night known for their ramen. Neat vibe. Hip-hop blasting on the overhead (with a notice on the wall "This establishment plays music with explicit lyrics), NeoGeo arcade unit in the corner, action figures glued to the ceiling, an Infinity gauntlet oven mitt and comic books on the walls. Oh, and good food, too.
Octopus croquette appetizer. The purple thing in the middle is a nice meaty chunk of tentacle.
Ramen bowls. I got a spicy “fried” chicken in a light kinda-cornmeal and chinese five spice crust. Mrs. got a spicy vegetable bowl with great roasted brussels sprouts and charred corn.
Linguine with fresh tomato sauce, avocado, and smoked salmon.
So a few months ago I remember stumbling across this video on YouTube that was about a “one-pan pasta recipe.” Any real Italian would have screamed sacrilege, but I’m an open minded person so I recently searched for that video and gave this a try…
It’s very simple: you put pasta in a pan, add diced tomatoes and sliced onions, basil, olive oil, salt, garlic, and water. You bring to a boil and then you let it simmer until the water is absorbed and the pasta’s cooked.
I added parsley, avocado, and salmon as a personal touch to the recipe.
This came out extremely good. I wish I would have used a tad less salt, because the salmon is already pretty savory on by itself.
Still, one of the best meals I’ve had in a while. Tomorrow I’ll try this again with ground turkey instead of salmon, and will cook everything in stock instead of water.
