30 hours on the smoker and this 20 lb prime packer was finally done. pulled at 205 to rest in a cooler for 4 hours.
Perfectly tender with a bark formed by a Texas style traditional 50/50 s&p rub over a post oak and mesquite wood mix.
No wrapping. They always look completely burnt but they’re definitely not.
Jalapeño cheddar deer sausage to go with it.
