Leftover night is honestly one of my favorites because I get to get creative. Check this microwave Carnivore Casserole
I used a glass storage container to “bake” it in. 4 egg whites, a splash of beef bone broth, 12 paleo chicken meatballs cut in half, and a sprinkle of shredded grassfed dubliner cheese. 4 minutes in the microwave and it’s a casserole. If I really wanted to dress it up I’d crumble up some pork rinds on top to give it a crunch, or line the bottom of the dish in a similar manner to give it a base, but as far as getting in a quick and delicious meal goes: this was amazing. I topped it with some grassfed sour cream later, because that stuff is amazing, but it was also fine without it.

On a related note about beauty products in the kitchen, salon squeeze bottles are the best for sauces. It’s always funny when a hulking chef with a shaved head shows up in a store and asks for hair coloring application bottles.

I use it for anything that needs to be as dry as possible, really comes in handy since the apartment hovers between 70 and 90% humidity

This is what yesterday’s eel turned into
first dish: eel broth jelly with pea shoots and caviar
Second dish: smoked eel with miso mustard sauce
third dish: pan fried eel with smoked tomato and asparagus
fourth dish: teriyaki eel rice
Dessert 1: homemade lychee sorbet with bayberry and limenade jellies
Dessert 2: sesame brown sugar cookies with rice tea

My original intent was to cut it into steaks…but, after breaking out my meat grinder the other night, I realized I could make some REALLY baller ground sirloin out of it.
Shall it become steaks? Ground sirloin? Half one way and half the other? I leave it in your hands!

The meat is 1lb of ground venison and 1lb of ground grassfed piedmontese sirloin steak tips

3/4 cup of that Primal Kitchen Ketchup, 1 tablespoon of Kevin’s Paleo Powder, 1/2 cup of Zoup Beef Bone Broth, Egglife Egg Wraps, and I used Goat Cheese just because I’d never had it before and wanted to give it a try, but any cheese is fine. Also Kalona Grassfed Sour Cream.

The spray duckfat is there because I used my Instant Pot’s sauté feature to cook the meat, but you can always use a more traditional frying pan approach.
This was spouse AND kid approved, which is always a big deal. The meat is STUPID lean, making this very low calorie as well if you want to make it diet food, or you can use fattier meat (ground bison is absolute fantastic and VERY primal).

@ChickenLittle I appreciate that sentiment, but those would require vegetables, which are, of course, the devil, haha. @SkyzykS It was an awesome mix! Really digging having my own meat grinder. And now I went out and bought a “meatsaw” so I can cut into my frozen stuff without having to thaw it and deal with that nonsense, so things are looking pretty awesome in the home butcher shop.

I’d love to be able to blend and season my own batches of sausage. As it stands, i can’t find anything with an acceptable amount of sodium in it.
There are a few processors, but without an extra freezer I’m hesitant to get a big batch made.
Ever look into the Mrs. Dash line of products?
