Flax Seed Pancakes

I don’t know if this has been posted before, sorry if this is a repost. My wife found this recipe when she was doing the South Beach Diet. It’s a good fix when you’re wanting some carbs. A good way to work some egg whites into your breakfast.

I’ll usually make a weeks worth on the weekend.

Ingredients

* 1/2 cup all-white liquid egg substitute (I just use egg whites)
* 3 tablespoons ground flax seeds
* 1 teaspoon baking powder
* 1/2 teaspoon vanilla
* 2 (1 g) packets Splenda sugar substitute
* cinnamon
* nutmeg

Directions

1.Mix first seven ingredients in a small bowl. (The baking powder blobs up so you have to stir really well until it dissolves).
2.Spray a heated pan with non-stick spray and pour in half of the mixture. It will immediately sort of fluff up like a pancake. Brown on one side and flip. I cooked about 2 minutes on each side.

Question: Why not use whole eggs? (I might try with whole eggs anyhow)

Sounds like a great recipe! I like to throw in a scoop of whey protein into my pancake mix also. You really can’t tell the difference if it’s vanilla whey.

I just whipped up a huge batch of these. I used 2 dozen eggs. About 3 egg whites equaled 1/2 cup, so I multiplied the whole ingredient bill X8. It makes about 20 or so 6-7inch pancakes, depending on how thick you make them. Then I just stack them in a tub in the freezer with wax paper between every other one, so I can grab them by twos. Pop them in the toaster or micro and they’re ready to go.

This time I also added a scoop of protein powder and a cup of ground oatmeal. The 1 scoop of protein probably contributes a negligible amount when you divide it by the 20 or so pancakes.
