Awesome Oatmeal Pancakes!!!

This is a REALLY tasty and non-boring way to get in your whole grain carbs.

Combine:
1 cup of old fashioned rolled oats.
Two whole eggs and two egg whites.
1/2 cup low-fat cottage cheese.
Berries of your choice (raisins are great here).
Pinch or two of salt.
Also, optional is an artificial sweetener and crushed almonds/walnuts.

Hand mix batter until even consistency, cook just like normal pancakes, but use a low heat as these can char quickly. They take just about the same cooking time as regular pancakes.

These are also good cold - so make a double batch and snack on them during the day for those of you in a weight gain phase. This would compliment Berardi’s tips on being prepared food-wise for your busy day.

There’s this sugar-free maple “Vermont” syrup made with Splenda that tastes almost like regular, but with only 10 cals per 1/4 cup! I also scramble 8-10 egg whites w/ salsa for more protein.

If you are solely looking for a P+C meal you can certainly live without the nuts. But without the egg yolks, the mix falls apart upon cooking. If you do get it to work though, please share your trick.

Good stuff. IMO not enough people post recipes on here. I’ve posted several. A tuna casserole for people who don’t like tuna, and whole wheat pizza dough.

Might just give it a try tonight sinct it is squat night and I’ve got loads of oats, eggs and cottage cheese kicking around.

It also sounds easier to throw some in your pocket than cottage cheese… :wink:

I use;

3/4 cup dry oatmeal
6 egg whites
1 cup non fat cottage cheese
1 Tbs. Flax seeds
1 tsp. Vanilla extract

Vanilla works great. Cinnimon is a great add-in too.

I just made a a batch, and I have a few suggestions.

Here’s the original for TopSirloin

I would suggest
first, beat up the eggs separately, add in the vanilla (a capful)

add 1 teaspoon of baking powder (helps make them rise) to the oat mixture and mix.

extra tip For “less chunky” pancakes, put the oats in a food processor and grind them a little…so it’s more like flour.

Combine the dry and wet ingrediants. I added a splash of milk, and let the oat/egg/cottagecheese mix sit for a few minutes to soak.

I also added about 1/2 cup of frz blueberries (best to defrost them - 30 second in microwave works)

and add splenda/stevia to taste.

I have electric cooktop…and setting at “3” out of 7 worked well.

Oops, I forgot! I also add 1 tsp. of cinnamon and 3 packets of splenda.

StrongMan: great addition! What’s stevia like? I can’t stand artificial sweeteners, and I’ve seen stevia around but don’t know anything about its taste or qualities.

When stevia is used in moderation, it’s not too bad. It’s also super-concentrated and not too expensive.

It has more of a after taste close to honey…but not quite. It’s that aftertaste that prevents me to over do it. But in this case, there’s the natural sweetness of the blueberrys and the vanilla brings out a natural sweetness too…so the stevia is more of a finishing sweetness.
