My favourite power food is Fish. I like any kind of fish like salmon, pompret and lots more. I would like to have it fried and even in curry.

Well, it is one of my favourite sauce and dressing and I prefer it everytime when I go for my favourite subs. I am glad that I have fat free sauce to enjoy it.

80/20 beef and onions is a simple power food that’s super easy and super cheap.

I prep the beef by making 4-6 oz balls with my hands.

I prep the onions by slicing them as thin as possible. I keep telling myself I need to buy a slicer to make it easier but the chef’s knife only takes a few minutes.

I typically prep 3-5 lbs of beef at a time, along with several onions.

Beef balls go into a preheated skillet, then smashed flat with a flat bottom glass bowl or whatever I have laying around to flatten them. I use cast iron for this but my carbon steel works fine too.

I season each patty with salt, pepper and a bit of garlic powder, then put a substantial heap of onions on the uncooked side. The patties sear quickly, so get this done fast. They only need maybe 2 minutes on this side.

I flip the patties and cook the other side about twice as long as the first side, depending on patty thickness. By the time the onions get some nice color from the beef fat, you are at a medium or medium well cooked patty.

You can top with cheese, eat them as-is or use it for a simple beef and onion soup with some bone broth or something similar. Chop them into taco meat if that’s your jam. You could even put them on a hamburger bun, I suppose.

Preheating the pan is the longest part, once the simple prep is done. Total cooking time is around 5-6 minutes.

Have you tried mixing finely chopped cooked mushrooms into ground beef?

It adds flavour and moisture

I have. I often will saute onions and mushrooms at the same time I do this, making a big batch to have on hand. You can mix anything in with the beef and it will work. I’ve done mushrooms, bacon, jalepenos, you name it. You just need to make sure you’ve got enough fat in the pan, either from the beef itself or simply adding it.

Knowing how to sear meat forms the basis for most of my day-in, day-out cooking in 2024.

I have made all manner of meatballs and meatloaf but haven’t for a while since cutting out things like oats and breadcrumbs that I would typically use for binders. It is another one of those methods that, once you get the basics down, can be taken in all kinds of directions. I think I’ve made about five different recipes just from Epicurious alone.

Simple beef patties seared on the pan are just one of those foods that doesn’t get old for me. It isn’t the same as a ribeye, but it’s not that far off of the mark.
