Well you just named one pretty serious reason not to eat tuna every day, that being the mercury. Also egg protein, albumin, is almost 100% used by the body. And you can buy straight egg whites if you want. Personally I eat the whole egg, since there are many nutrients in the yolk, and it tastes better.
That said, eggs aren’t essential to reaching your goals, and you should do what works for you, although the mercury is a concern. Look around online, and you’ll find reputable sources warning against eating tuna as frequently as you are.
Egg whites have have the highest bioavailablity rating of all protein sources and is the gold standard by which other protein standards are judged.
Tuna, while a great protein source, has several issues assiciated with it that make it not a great thing to be eating every day.
Mercury levels - bioaccumulated up the food chain, and tuna are top of the food chain predators.
Tuna are over fished and the fishery is on the verge of collapse. It would be a same to wipe out these amazing animals. So do your part and cut back on your tuna consumption.
Eat red meat from an artificially selected animal like cattle instead.
Egg whites have a higher insulin secretion since you are removing the fat. This could be a double-edged sword, because you are also drastically reducing its caloric value also. It depends your goals, but I think if you threw in a yolk now and then it wouldnt kill you.
You also need to find creative ways to use egg whites. You could do a veggie omelette with a little oil, or PAM. Spice it up a little.

Poliquin’s wrong. Or at least the people that quote him are. Only nerds avoid egg yolks at all cost. Adding ADDITIONAL egg whites to beef up protein content is very smart. A very good source of protein. Extremely high bioavailability [as Gojira said] Buying cartons of eggs and ditching half of the yolks is ridiculous though. Buy prepackaged egg whites.
