I have always counted every thing including lettuce etc in my carb count,should i count it all or just brussels,calulflower,etc.

In the broadest sense, everything that goes into your mouth counts. Realistically, your daily servings of green veg should not impact upon your ketone levels. However, I have heard of cases where keto dieters were being kicked out of ketosis with modest intake of avocado. While not a green veg, the point is if you are aiming at being super strict you need to have some grip on total intake.
Depends on your goals, pretty much as stated above.
I’ve never counted anything green, leafy or cruciferous. If you’re eating multiple avocados, heads of corn or potatoes however, then you’d need to count them obviously.
