Coffee Ice Cream
Yet another recipe for the Ninja CREAMi machine.
Ingredients:
• 12 oz 1% milk
• 2 scoops vanilla Metabolic Drive
• 1-3 teaspoons of instant coffee (to taste, decaf)
• 1 tablespoon half-and-half or coffee creamer
Directions:

Whisk everything together except the half-and-half or creamer. The instant coffee won’t fully dissolve in cold milk, but that’s okay. The machine will take care of it. Freeze overnight.

Spin on the lite setting.

Make a little hole in the top of the ice cream (which will look a little powdery). Add your half-and-half or whatever coffee creamer you like. Also a good time to add cinnamon if that’s your thing. Re-spin and enjoy.
Notes:
• I went with decaf since I eat my ice cream at night, but you do you.
• Espresso powder works too.
• I added shaved 100% baking chocolate to the top for a bittersweet punch.
• Play around with the amount of instant coffee to get the flavor you like.
• You’ll get about 57 grams of protein from this one (whole pint).

Thanks Chris! I have been following all of your CREAMi treats and of course bought one of the machines. Your recipes were a great start, and of course an excellent standout use for vanilla MD. The flavor of the protein really helps the ice creams a lot even without adding sweetener to the protein ice cream recipes. Can’t wait to try this cake flavor.

Stuffed Sweet Peppers
We took some fat-free cream cheese and mixed in a bunch of cooked and chopped turkey bacon, chives, and spices. Stuffed the mixture into sweet peppers and baked them at around 400 degrees F until browned.
Some of the stuffing splooged out during cooking, but these were delicious.
Oh, man! Those look dang good. My girlfriend made similar stuffed peppers last week. The peppers were fresh from the garden too. It was fan-freakin-tastic.
If I ever started a garden, it would be all peppers.
We normally make this with jalapenos, but the sweeter peppers (older/riper jalapenos; they’re all the same thing) were even better.
I forgot to take final photos of this, but if you blend a little cream cheese, a handful of grated block cheese, tomatoes, spices, and a bloop of stock, you can pour that over any ground meat and make it into an awesome meal.
Just switch out the type of grated cheese and the spices for variety. Works with cottage cheese too instead of cream cheese. Amounts don’t matter much. Just keep it thick, not too much stock. Pour it over cooked ground meat and heat it up and you’re good to go.
My first shakshuka. Traditionally, shakshuka is made by simmering onions, peppers, and tomato sauce with spices like cumin, paprika, and chili, then poaching eggs directly in the sauce until set but still runny.
I added ground beef because I’m a protein slut and cooked the eggs too hard on accident. Still delicious.
I prefer them hard. Great job husband!
