Peanut Butter Cup Buckwheat
I was reminded in another thread about hot buckwheat cereal, or cream of buckwheat. Buckwheat isn’t wheat; it’s actually a fruit seed, sometimes called a pseudo-grain. Really healthy stuff, highly satiating (more so than even oatmeal), and even contains chiro-inositol which helps with glucose metabolism and cell signaling. Best of all, you can make it the microwave.
Here’s what it looks like:
Tastes pretty good all on its own, better than the cream of wheat you probably had as a kid. And even though it contains all 8 essential amino acids, it’s not exactly a protein source. So I add:
• 1 Scoop Metabolic Drive, chocolate, per serving of buckwheat
• 1 Tablespoon PB2 (powdered, defatted peanut butter)
• A few plain nuts, almonds or walnuts
• Just enough almond milk so you can stir everything together
And you get this:
Here’s where you can pick some up:
Last time I bought it at the health food store, it came in a bag. Same brand though: Ponoco.
