Coconut Milk

Hi everyone,

Ive being using some coconut milk as my fat source preWO for several reasons including the energy boost of the MCTs and because I inevitably have to go to the gym pretty close to my last P+F meal, and since I drink my surge during my WO, I dont want all that dextrose and high concentrations of insulin encountering with my last meals fat circulating in my bloodstream.
I use coconut milk because its MCTs digest so fast that they probably wont be in the bloodstream by the time I start drinking my surge.

I have a few questions about coconut milk:

  1. What percentage of coconut milk is MCTs?

  2. I buy canned coconut milk and I dont use the whole can in one sitting. I used to scoop out what I needed and store the rest in the refrigerator to scoop 1/3 cup later, but as you may imagine, after a couple of days it had condensed a lot, making me clueless of what a serving was now. Then I started splitting 1 cans servings in 1 day and storing them in different containers for the rest of the week, but by the time I was going to use some of my stored coconut milk it was rancid. Any tips for storing/preserving/dividing coconut milk more efficiently?

  3. Can you share some coconut milk recipes?
