I am following a nutrition program that calls for virgin coconut oil. I have regular access to fresh, inexpensive, coconuts at a nearby supermarket. Is it ok to eat the raw coconut meat and also drink the juice as opposed to buying coconut oil and consuming that?
If anyone also understands the process of extracting the oil from the coconut, any information on that would also be greatly appreciated.

Do both.
Coconut oil is great.
Coconut meat and juice you can mix with your food and/or protein shakes.
Get the best of both worlds.
Id say hell yes eat the coconujt and the milk BUT depends on this diet. If its limiting carbs a ton well your going to be getting some from the coconut. one ounce and your talking about 7 grams of carbs sure some is fiber but 1 oz aint much.
the milk on the other hand for 1 cup raw milk has 13+ carbs, 57+ G fat, and 5g or so protein.

What is the best way to harvest the milk and meat?
Cocounut milk is technically the juice and meat ground together into a viscous liquid. Some people just carefully crack open the coconut with a heavy blade like a large cleaver, but you can get all the juice out by drilling two 1/2" diameter holes with a clean drill bit.
If you’re on a lower carb diet, then coconut oil and water is the best thing to consume.
Either way, in my opinion (other than omega 3) coconut oil is one of the healthiest fats on earth to consume.
I usually crack one open and have it in my shake or have some oil with my shakes, or use for cooking.
It sure is a great health food.
It’s great for people with thyroid
health problems too.
Coconut oil is usually pretty cheap too. The thing about the oil is that it can be used for cooking at higher temperatures while remaining stable. So if your nutrition plan calls for cooking with coconut oil, I would stick to that. Olive and other oils are better for salads and stuff.
