What temp are you taking this to on the smoker? Or are you just taking it like a bitter pill when you eat it?

For me, liver has to be cooked just right or else I can’t do it. A perfect medium and covered with some onions? I’ll eat the whole pound right there. Anything under or over - turns into an eating challenge.
