If you could monitor ur blood sugar levels, what would you expect too see from someone who isnt too sensitive to carbs? A rise in blood sugar after a meal, then would it stay elevated for a longer period of time before gradualy returning to the base level?
The term carb sensitivity is a bit of a misnomer. You should think in terms of insulin sensitivity/resistance.
What you described, a rise in blood sugar that takes a longer time than usual to return to baseline, would indicate insulin resistance (assuming there is nothing wrong with insulin secretion itself).

Interesting question, and just how dramatically those serum glucose readings differ across the spectrum.
Feels like that data is out there somewhere…
Yea, im keeping notes of mine before and after meals, be intresting to see the data over time

Agreed. Since carbs and insulin sensitivity would be inversely related, it can lead to confusion.
