IMO sprints should progress naturally by you running faster each time.
In the absence of accurate timing just make sure they are all maximum effort.

I mentally want to do second workouts but whenever I try to start something, I can’t seem to stick to it after a couple of reps/minutes
What should I do?
The typical answer here is “rest and recover”, but for what reason are you wanting to do second workouts?
I feel antsy and mentally ready to go. It’s strange because the second I start, it feels like a switch turned off
Psychology is SO far outside my wheelhouse. I don’t think I have a healthy psyche. If the reasons were for physical benefits I’d have a better chance of helping.
