You seem to be really, really good at picking approaches you don’t like. Have you found any you do like yet?
I’m surprised to find no-one have suggested Fortitude Training to the OP. There you have lots of different stimuli based on available science and experience, your own choice of volume. A balance between volume, frequency and intensity. This coming from me, a recurrent HIT trainee, not scared of trying different approaches. You may well find your preferences through this program.
As many others before me have said: Try something different, for a different outcome.

Save your money. Wait for a rainy day and go for a run/scramble/Bushwack through the nearest mountainous forest. It’ll have better views, be less limiting in where you can run/swim/climb and you won’t have to deal with so many annoyingly cheerful motivational team leaders and shit. Take your dog.

Lot of more fun/scenic/tougher things you can do on your own without having to fork out the $$ and deal with other people. YMMV. I’d rather do a big through hike or something, personally.

I do PPL 5-6 days a week with a powerlift each session, and DoggCrapp inspired progression. I bastardized the shit out if a few different routines/programs and have done pretty well on it - to the point of increasing PRs while on a 1000cal daily deficit.
Some people just respond differently man, figure out what works for you!
I think everyone is overlooking this very important issue. You need to take care of this first before you can even begin to assess progress. I’m guessing your work capacity and conditioning suck as well so your lungs are likely giving up long before your muscles on all your sets to “failure.” If you’re open to help on training and eating to cut, I’m happy to help.
