Caramel Pecan

Caramel is a tough flavor to reproduce when you make healthier, no-added-sugar ice creams. Luckily, I found sugar-free caramel syrup and salted caramel cupcake pudding/pie mix. Here’s how to put it all together:

Ingredients:

• 12 ounces milk (Milk 50, vanilla)
• 2 scoops vanilla Metabolic Drive
• 1 tablespoon caramel syrup, sugar-free
• 1 tablespoon caramel pudding mix, sugar-free
• 1/4 cup chopped pecans (mix-in)

Directions:

  1. Whisk all the ingredients together except for the pecans. Freeze.

  2. Spin on the Lite setting.

  3. Dig a hole in the middle and add pecans. Hit the mix-in button.

Did a bit better by way of pretty tonight. Was out of dark chocolate so used cocoa powder instead.

Finally got around to making the “pumpkin spice” recipe Chris, it was quite good. I think I might omit the coffee next time and blend in some graham crackers for a more pumpkin pie vibe

Ricotta Tart Cherry

Dani said this tasted like cheesecake. Wasn’t what I was going for, but we’ll call it a happy accident. Here’s how to make it:

Ingredients:

• 1/2 cup ricotta cheese (I used part-skim)

• 2 scoops Metabolic Drive protein powder, vanilla

• 10 ounces milk (I like Milk 50, vanilla)

• 1/4 cup tart red cherries, chopped (I used frozen)

Directions:

  1. Add the milk, protein powder, and ricotta to the pint or a bowl. Buzz it with an immersion blender until smooth. Alternatively, use a standard blender.
  2. Freeze.
  3. Spin on the Lite setting.
  4. Dig a hole in the top and add the tart cherries. Hit the Mix-in button.

“My wife” got one of these as a gift as a result of me reading this thread. It’s amazing, because I can’t get through 2 scoops of protein, 1/2 cup of milk, and a little fruit in one go with this. If I was just taking that down, I’d easily add a couple cheeseburgers on top.

Maybe blasphemy, but ChatGPT is recommending soups in this thing. Have any of you ever tried that?

I’ve seen savory recipes show up in Reddit threads. Sounds nasty to me! I think people have used canned tomato soup?

How’d this one taste? I found some salted caramel pudding mix on amazon…going to try this. I live in Braum’s territory, and one my absolute favorite treats is a buttered pecan frozen yogurt mix. I’ve been throwing around ideas to try and mimic this. This concoction may get close with the added benefit of caramel.

It’s pretty darn close to caramel flavor considering the lack of calories. Much depends on the amount used. I’ve tried 1 and 2 tablespoons. Unlike extracts, you can use a pretty heavy hand without getting a weird aftertaste.

Finally got around to this one this week, it passed the wife test so im gonna call that a win. I found it quite good too, definitely one worthy of remaking, and since I have a whole can of cherries thats a good thing

@Chris_Shugart have you found a sugar free cookie dough recipe or prepacked you like? I’ve been on this vanilla with salted chocolate turtle shell for last few weeks, but want to mix it up. I’m also debating picking up cookie butter and mixing that in. Obviously that will have a few grams of sugar, but all things considered, 10G of sugar or less is pretty darn good for ice cream.

“Wife test” is a great test. Picky kid test is even better.

I haven’t tried to hack that flavor profile yet. But I did stumble across this.

As for adding a sugar-containing ingredient, I usually try to avoid it, but as I always say with things like hot sauces, if a few extra sugar calories helps someone eat 40 more grams of protein, then it’s no biggie.

Double Ricotta Strawberry

After the success of my tart cherry ricotta recipe above, I decided to double the ricotta, reduce the milk, and try strawberry. Success! Here’s how to make it:

Ingredients:

• 1 cup ricotta cheese (part-skim)
• 2 scoops Metabolic Drive, vanilla (60g)
• 7 ounces milk (Milk 50, vanilla)
• 1/4 cup strawberries, chopped (fresh or frozen)

Directions:

  1. Add the milk, protein powder, and ricotta to the pint or a bowl. Buzz it with an immersion blender until smooth. A standard blender works, too.

  2. Freeze.

  3. Spin on the Lite setting.

  4. Dig a hole in the top and add the strawberries. Hit the Mix-in button. Consume. Make semi-erotic bliss face.

I decided to get a Creami for black friday and it’s showing up this coming week.

Is there a specific ice cream base you guys prefer for low fat?

  • Cottage cheese (4oz) + skim fairlife (12oz)
  • fat free Greek yogurt (10oz) + skim fairlife (5oz)
  • Ricotta cheese part skim (6oz) + skim fairlife (10oz)
  • skim fairlife (16oz)

I’m curious which one is creamier… we’re concerned solo milk will do that freeze/fracture thing and have bad texture.

I have tried a variety of diet friendly milks and really unsweetened almond milk seems to do the trick in terms of coming out like ice cream and comes in at basically no calories (30 per cup)

I haven’t tried cottage cheese/greek yogurt/ricotta like Chris has, but I haven’t tried regular cows milk, and oat milk as well. Even mixed a bit of heavy whipping cream into my almond milk once… I have gone back to just using the almond milk though. The machine really does make it work

You might have to respin it once, or even respin with a tiny splash of extra almond milk if it’s real “chalky” looking (or even a TBSP of heavy cream if you want to get crazy) but by and large it’s very successful

All freezers are a bit different so through experimenting I have found that a minute in the microwave before spinning it on Lite Ice Cream gets me best results (aka comes out like ice cream and I don’t have to respin usually). If I only eat a half pint and I want the rest later I refresh it and I do 30 seconds and lite ice cream mode (instead of respin)

I’ve used almond milk, fair life protein milk (chocolate), low calorie milk, etc. but prefer raw milk. I use two cups, with two scoops of protein. Then eye a bit of milk when it comes time to mix up. I’ve got it down pretty well now. You’ll have to play with it to get it how you want.

When I first got it, I used core power with a little pudding mix, then spun it up with a splash of fair life protein milk. That was pretty good, but raw milk is much better imo.
