I think they’re the same plant but if you don’t pick the green ones they turn yellow/orange/red as they ripen. I always assumed that’s why they’re usually cheapest.

@burnur is right, green peppers are just less mature. But they taste different, like many other vegetables that aren’t properly ripened, and they get sweeter as they go. They’re a little bitter. Your taste buds might be broken though.

Technically they are the not same plant. You plant seeds for red, yellow or green peppers. Green bell peppers will turn red if you let me hang on the bush too long, but that’s not what you are buying in the store.

It turns out the articles I had read on that were oversimplified and basically left out most of the truth - you may be seeing green peppers that are not-matured red peppers, but there ARE ripe green peppers. Thanks for opening my eyes, and reminding me of my #1 rule: if you heard it on the internet, you’d better check a shitload of places to make sure it’s not complete bullshit.

They all start out green but the plant determines what color they end up. I really love pepper plants. A few years ago I had over 50 plants with 15 different kinds of peppers. Most of them hot. Jalapeño, cayenne, ghost, Jamaican, scotch bonnets, chilis, chilitepin you name it.

In the spirit of this thread, I eat peppers like you’d eat an apple - including green ones.

Basically, the top, core and seeds are left over - eating it is an art.

My main food group for today was peanut m&ms.

I got the kids a ps4 and have the same problem. Luckily I have a 13 year old nephew who helped me.!
