Curried Chicken Soup

ngredients:

1 to 1 1/4 pounds boneless chicken breast or tenders
4 tablespoons butter
1 medium onion, diced, about 1 cup
1 carrot, diced
1 rib celery, diced
1/2 cup finely chopped green bell pepper
1 large Granny Smith apple, peeled, cored and diced
1/4 cup plus 1 tablespoon flour
1 teaspoon curry powder
1/2 teaspoon mace or nutmeg
1/2 teaspoon salt
pepper to taste
4 cups chicken broth
1 can (14 1/2 ounces) diced tomatoes
2 teaspoons lime juice or lemon juice
1 to 2 tablespoons long grain rice, optional

Preparation:

Rinse chicken and pat dry; cut into small cubes. Melt butter in a large saucepan over medium-low heat. Add chicken, onion, carrot, celery, bell pepper, and apple. Sauté, stirring, until onion is tender, about 6 to 8 minutes. Stir in flour until well incorporated. Add remaining ingredients, except rice. Bring to a boil; reduce heat, cover, and simmer for 45 to 60 minutes. If desired, add rice about 20 minutes before done.
Serves 6 to 8

Hey guys - Again, thanks for all the posts.

I’m holding up real good. Still focused and strong.

I signed up for a martial arts class which I’m really looking forward to getting back to - Ju Jitsu this time (I’ve studied it before but not to a great degree) as opposed to the TKD I used to be really in to.

I did some sparring last week with some mates and realised how much I missed combat sports.

I may not be able to put as much in just yet as I would like but it’ll come.

Just waiting on Dec 3rd now for the final check up and hopefully getting signed up on this clinical trial.

My weight is still dropping (down to 103Kg now) partly due to a lack of appetite but maybe to do with drugs etc too. No worries - I’ll get back bigger, heavier and stronger soon.

I’m down to a 34" waist FFS - mind it does look good to have a decent taper!

As a long term thing I’m taking photo’s which I’ll post up (not yet though) showing the weight loss and subsequent increase when I get sorted.

Good luck for your final check up tomorrow (I’m not sure if wishing you luck is the right thing, but you get the idea).

I’m never sure about Ju Jitsu, I did it for a year, then started up with MMA and prompty got my arse handed to me. I suppose it depends what you’re looking to get from it :slight_smile:

BTW you will need extra energy for the Nurses the combat sport and generally, so make sure you stock up on the doorstep sarnies!

While I think this will definitely help Renton recover, I’m concerned about the broader implications of thousands of men trying to get cancer to have access to this treatment.
