Pan Broil With Small Amount of Oil?

Is this method of cooking (pan broiling) a good way to prepare lean protein sources like chicken breast and turkey breast?

Is it better to not use the oils as they will denature in the high heat or is this avoided by using low heat?

why not just use a metal pan and toaster oven ? works great for me with chicken/fish

It’s a great, simple way to cook meats.

And you’re on the right track regarding high heat. It’s the polyunsaturates like flaxseed oil that aren’t very heat-stable, so you’ll want to stick with the saturated fats like coconut oil, butter and monounsaturated fats like olive oil, macadamia nut oil for pan-frying.

I use olive oil on low heat in the pan and keep it stirred. The chicken comes out great like this. I am going to cook lots and lots of it this way and store it in the fridge for easy access meals on the go. This, combined with brown rice and green veggies will make up a lot of my diet.

Do y’all avoid lunch meats from the deli at the grocery store due to high sodium, or are these meats okay to eat?

I use butter or peanut oil. Heat stable as all get out. I would be careful with olive oil as it varies greatly from brand to brand. Some might be fine to pan fry, others might smoke at 140 degrees.
