Job or not, you’ve got to eat on a mass gaining diet. There’s just no two ways about it.
Use portable proteins if you have to; jerkey and nuts, pre-peeled hard boiled eggs, protein shakes with flaxseed and/or cottage cheese, frozen fruit or peanut butter.
You were asking me about your GF and how she wanted to LOSE weight. My recommendations to both of you, actually, are to calculate protein requirements based on LBM. She can use 1.25g - 1.5g x LBM for protein and .4g x LBM for fat. You definitely need 1.5g x LBM for protein and could go with .5g x LBM for fat. For both of you, carb intake – quantity, timing and type – are what should be raised or lowered to manage energy levels and progress.
For your GF, have her look at T-Dawg 2.0 for a great diet that’s gotten people here pretty good results without too much carb deprivation. For you, you might want to look at Massive Eating by John Berardi.
