Nothing special, but just “discovered” this since I have just about no food in the house:

1 Avocado
1 Can Light Tuna in EV Olive Oil
.25 cup Walnuts

Mix. Salt/Pepper to taste. Maybe some garlic powder.

Delight.

Speaking of avocado, I like to chop a cucumber into small pieces, and add half an avocado, diced. Mix with a little salt and pepper, and drizzle on some homemade yogurt dressing (plain yogurt, cilantro, lemon, salt, pepper).

Makes a nice little side salad. It’s really tasty, and you get some healthy fats and fiber. If you want, add chopped crabmeat and sprinkle on some sesame seeds - tastes something like a california roll.

I was out of town last week for my honeymoon, so no groceries this week…Home from work, hungry, too tired to go shopping, starting a new routine this week so didn’t want to crap on my diet before the first day of the week was done…soooo, I whipped this up from whatever I could find in the freezer/pantry.

Low carb chicken parm w/ lemon pepper broccoli

ingredients:
(chicken)
1/2 a package of Trader Joe’s frozen chicken breasts w/ rib meat
1/2 jar of a Trader Joe’s marinara sauce
crumbled Parmesan cheese
shredded Monchego cheese
2 tbsp EVOO
salt, pepper, garlic powder, crushed red pepper

(broccoli)
1/2 bag of frozen broccoli spears
1 tbsp organic lemon juice
lemon pepper

  1. placed frozen chicken in pyrex baking dish, 1 layer deep

  2. drizzled meat with EVOO, seasoned w/ salt, pepper etc.

  3. covered with marinara sauce

  4. covered dish w/ aluminum foil and baked in 400 degree oven for 20 minutes

  5. removed dish from oven, turned chicken breasts, stirred sauce and covered each breast with a mix of cheese, placed back in oven for another 15 minutes

  6. put broccoli in microwave safe bowl, drizzled w/ lemon juice and a little water, seasoned with lemon pepper

  7. covered with layer of seran wrap, poked holes in wrap and microwaved for 3.5 minutes

  8. chowed down, full and happy

OK-- haven’t done one of these in awhile, so I thought I’d give a ‘bump’!!

In celebration of getting a new job and some other stuff, I thought I’d grill up some “Land and Sea”:

Steak, Shrimp, and Scallops on the Grill, and Spinach Salad!

Got some locally fresh caught scallops and some shrimp (pre cooked) and a couple nice cuts of steak to marinate.

Ingredients above. Similar marinades but slightly different tastes:

Steaks
Shrimp
Scallops
EV Olive Oil
Soy Sauce
Worcester Sauce
Garlic
Garlic Powder
Coarse seasoned pepper
Parsley
Chili Powder

Fresh Spinach Balsamic Vinegar EVOO Pepper Goat Cheese Calamata Olives

The Meat.

Marinaded in EVOO, W. Sauce, Parsley, Garlic Powder, Seasoned Pepper

Shrimp with EVOO, Chili Powder, Coarse crushed garlic, spiced pepper, and just a little garlic powder


Raw scallops before…

Scallops with similar marinade as the meat.


OK, fire up the grill. Meat on.

Wrapped the shrimp and scallops in aluminum foil ‘boats’ (2 sheet thick).

Meat was done in a few minutes (I like rare/med). The shrimp/scallops took about 6-8 minutes.

Land, Sea, Garden, and Vine!

That’s a Rioja red wine (Spanish).

benmoore-- you’d be amazed how much you can do with hamburger and ground pork-- stuffed peppers, sauteed w/vegetables in Olive Oil and garlic. In tomato sauce (ie meat sauce).

Really, many cuts of meat are not expensive. Look for near expired cuts, you can usually get them for dollars off. “Sell By” date does not mean “instantly go bad” date. Buy them up on the cheap and throw them in the freezer.

Check out the spinach/sausage thing I did a few pages back. Italian sausage comes in different varieties of leanness and flavorings-- a good way to get some P/F (ok, mostly ‘F’, but still…)

Seafood-- same thing. There are always specials going on in the supermarkets and usually at your local seafood market. You can buy frozen shrimp and fillets reasonably cheap as well.

EVOO is just the best thing ever. Sometimes I’ll take a teaspoon or a tablespoon and down it. SO good. :wink:

I’m going to be away on business in Colorado this week, but when I come back, maybe I’ll try some kind of Chicken thing. I always pick up a good recipe or two out there, then ‘Italianize’ it :slight_smile:

My initial thought was to bastardise a simple turkey burger recipe… so it can be made in bulk, will freeze happily

frozen turkey mince
eggs
tomato puree
italian seasoning
chopped onion
garlic
morzerella
parmesan cheese

fry up in a little olive oil…

… Yup I’m a horrendous cook.

In the UK or at least where I’ve been looking - you wont get a pack of 6 sausages that arent carb rich for less then £3 or so! Too much to become part of my diet!
