Rolled Oats: The oats found in the huge cartons, they can be made in some hot water or microwave in a couple minutes. Dissed by Charles Poliquin because he feels too many people have a cortisol reaction to them from allergies.
Steel Cut Oats: Come in a box, or a mini-carton, they usually take about 45 minutes to an hour of soaking or more to be ready for consumption. They apparently have a bit more of an oaty-nutty taste.
