Low metabolism and 30 % BF = Coconut oil contains too many saturated fats for her right now. PUFA and MUFA are a better choice right now. When she will be leaner, no problemo.
Regarding the carbs, below 30% is not required for her until 20 % BF. It is important to keep a weapon to destabilize the metabolism. Right now, it is important to put fuel in the tank to give her an opportunuity to increase MM and turn on the fat burner.

KatasticCat- So I just read the main post again and noticed that you are 5’7" and now 133lbs. My best friend is 5’7", thinly built, and looked near-anorexic at 140lbs. Can you post a picture of yourself? According to what you’ve posted, you have a BMI of 20.7, which is on the low-end of the normal range. Obviously that isn’t an indicator of body fat percent, but it does make me question whether you’re really as fat as you say.

PUFA have a higher correlation to CVD. Saturated with has no impact on body fat levels in a different way to any other fat source would. Coconut oil is more likely to be used as an energy source (as well as keeping mitochondria healthy) due to it’s high content of lower to medium chain triglycerides. Medium chain triglycerides are a much better way of up regulating the enzymes necessary for ketosis.
Excessive cardio can lead to fat storage.
