And to whoever asked Pittsburgh style grilling, That happens to be one of my favorite grills and no-one knows what Im talking about when I ask it that way. I know is some southeastern restaurants its called Charleston-Special. Not quite like what i’d eat at Charlie Brown’s in NJ but still decent.
I rarely eat pork or beef but when I am “allowed” to eat it I prefer organic farm raised grass fed beef purchased from the local farmers market.
- Porterhouse 1 1/2 - 2" (processed no longer that 2 weeks)
- Pre seasoned with a hefty dose of Salt and pepper
- Gilled on charcoal (of course)
- Pittsburg style (burned to a crisp on the outside, bloody as hell on the inside–which is why I prefer organic and as fresh as possible)
- Gilled aspragus seasoned with lemon juice or a good pasta salad

Filet Mignon: wine marinade
Others: fresh black pepper, soy sauce, Worcestershire sauce, Montreal steak spice
BBQ: Max temp with a good sear – flipped once only. Rare to medium-rare.
Pan-fried tenderloin: slow and steady, med-rare to medium.
BBQ, except tenderloin (pan fried).
Fried onions and mushrooms, and broccoli.

Fresh Elk or venison backstrap(tenderloins), very rare, grilled jalapenos, asparagus and tomatoes and a big green salad. Since this would be a special occasion wash it down with a Samuel Smith Oatmeal Stout.
