To be honest I have some issues when it comes to eating vegetables and specially when it comes to controlling carbs. I am sick of steaming my vegetables. But I found this great tasting recipe and wanted to share it and put it out there for it to be scrutinized. Thus, I would very much like feedback. I am particularly trying to shed some unwanted fat and I think this is great side dish (but I might be mistaken… I am not very imaginative when it comes to healthy nutrition… hence the steaming).
OK HERE IT IS:
Ingredients:
two medium eggplants
two or three medium zucchini
one big container of cherry tomatoes
kalamata olives (I usually buy one of those medium glass containers and use it all)
extra virgin olive oil
Cut the eggplant and zucchini into small pieces (about the size of a die or slightly bigger) and place in a big mixing bowl. Then add the cherry tomatoes, salt and olive oil and mix around.
Dump it all in an oven pan.
Set oven to about 375 F for about 35-40min.
(I like to keep it the longest amount of time possible as it softens the zucchini and the eggplant more.)
Remove from oven and add the kalamata olives to your liking (I like a lot). Quick mix again and serve.
I haven’t done the nutritional break down, but there is very little carbs from the vegetables. I dont think a cup will exceed 10-15g? Maybe ? The olive oil gives a good source of fat content and so do the olives.

ON THE GO: Sometimes before I go to work I take out my pre-cooked chicken cut it into small pieces and mix it all up. In my super market there is cooked shrimp and mussels and sometimes I just add that straight in to the mix.
I am also considering adding cappers. Enjoy!
