Potatoes roasted with beef and bacon drippings.
Bad pic, but seriously the best roast potatoes ever. Little bro practically ate the entire pan.
Used the recipe from serious eats (can’t post link) basically, parboil the potatoes wjth salt and a bit of vinegar (helps bring out the starch)
Toss in fat very roughly so that there’s a thin layer of potato fat mash coating each piece. Roast at 500f(260c) for 18-20min, then flip and go for another 15-18
Side note: mixing ground beef with some ground bacon (the raw kind) makes for some seriously flavourful burgers @alex44938

Wife was direct and to the point about them though. She doesn’t like them anymore. Morels, ok. Maitake are her favorite. But these? Meh.
They released a ton of juice when I put them in the pan.

But by now it’s just experience and strategy. I don’t risk anything, and the ones I go for are virtually unmistakable.
Like, a couple of weeks ago there was what appeared to be a few Cesar’s Amanita among various others, a few amanita muscaria, and a variety of boletes. All about 50 feet from a massive patch of chanterelle.
So I just took pics of the others and only gathered the chanterelle.
Also on strategy- I’ve never used only one source for verification. 3 sources and preferably an in person ID from a real mycologist.
I know you’re pretty bright, but Absolutely Don’t use Facebook groups. I’ve seen dickheads intentionally mislead others and laugh about it on those.
