The ducks were on purpose. Their eggs are twice as thick as chicken eggs. Great for baking. Not so good for dippy eggs

Best pizza ever ever had in my life!

Trader Joe’s garlic herb dough
Whitenalfredo garlic sauce
Carmelized onions
Thinly sliced filet mignon
Mozzarella cheese
Topped with balsamic drizzle

At first I got mad at my girlfriend for wanting to “waste” filet on pizza, after eating it I shall be doing it a lot more!!

Post workout soba noodles with goose, and elk. So rich in flavour. Shrooms. Apples. Yesterday there was sweet potato in the soup so that’s still in the broth. Carrots. Onions.

A variation on “fathead“ crust called “Carl’shead crust”. Cheese and almond flour based.
Most non-keto people (including lots of families with kids) that I have served this to like this as much or better than regular crust pizza.

Makes 2 pizzas:

180g shredded mozzarella cheese
56g cream cheese
84g almond flour

Preheat oven to 500 with stone or steel on the top shelf.

Heat the cheese in the microwave in 20sec increments, stirring in between, until its melty. If it breaks and you see grease/water, toss it and take yer time next time.

Stir in almond flour and heat/stir until a nice dough forms. Should take about 1m40sec total heat time, more or less depending on the power of your microwave.

Split the dough ball in half and put one half in between two sheets of parchment paper and roll out 1/4” thick. If you bone it up and get holes, just reform the dough ball and reheat to loosen it up, then reroll.

Sprinkle the top with garlic powder and salt, then repeat with second piece of dough.

Cook in preheated oven (bottom parchment paper and all) for 2-4 minutes. The time will depend on your cooking surface and oven. Mine takes 2 minutes on a heat-soaked 1/4” steel sheet. Yours make take 5 on a cookie sheet. Trial and error is your friend. Check it every minute or so. It should get nice and bubbly. Pop the bubbles with a fork and remove the crust. You can precook all your crusts for the day this way, but I don’t recommend precooking and freezing as it makes for a mushy crust.

Allow it to cool enough to handle and tighten up, then Flip and brush with olive oil. Top with your (precooked or THIN) toppings. Less is more on the toppings, especially cheese. I don’t put my steak on it at this point because I want steak to stay medium rare, so if using it, wait until last 30sec of cooking.

Return topped pizza to oven (still on parchment) and cook 2-8 mins. Keep an eye on your edges. Ideally your toppings are melted and hot, and your crust is golden brown.

Cold Leftovers are nearly as good as the fresh.
