For meat I like the dry, wet, dry method.

I like to cut the chicken in thin slices and pound it out a little bit. Season it.

I use an egg milk mixture. This can be whole milk, buttermilk, evaporated milk. Lightly Season it.

Lightly season the flour

For the second dip you can use.
Flour (deep fry medium high heat)
Breadcrumbs (pan fry med heat)
Panko (deep fry)
Instant potato flakes (deep fry)

Anna is right. The oil needs to be just under the smoking point for most, but bread crumbs burn easily so lower heat on those. .

And “press” the flour/crumbs on. Don’t let them fall off all willy nilly.

I’ve attempted the described technique a number of times, and it’s very good.

Tried my hand at legit “low and slow” barbecue with some baby back ribs last night. 280 degrees (indirect heat) for about two hours on the gas grill.



The dry rub mix (kosher salt, black pepper, garlic powder, smoked paprika, and thyme) ended up being oversalted, but everyone in the house said it’s a keeper otherwise.
