Made some chicken parm over the weekend.

It used up the last mozzarella and the last jarred sauce in the house. Worth it.

Thanks. It is/was, but I’m open to any and all suggestions to keep the breading crunchy while getting the cheesy properly gooey, because it seems like an either/or situation.

I make the breaded cutlets, then put them in the tray with sauce, lay the cheese on, 'nother dollop of sauce, then in the oven for a while. Guess a broiler might be better?

Your guess is likely better than mine, because breading has been my arch rival, but I think the broiler sounds good. Maybe one rack setting down so it isn’t too intense, lots of direct heat to melt the cheese and heat the sauce as a finisher.

You’re cooking with the foil on? Try uncovering them. With it on, you’re basically steaming them.

Dieting and hating chicken breast?

I feel ya.

For real though, I tried making this “sauce” to add to my meal.

You can add moisture and flavor to the meat with little to no added calories.

Ingredients:
Bell peppers
A couple of pieces of diced tomato
Garlic powder
Salt
Pepper
Parsley
A sprinkle of parmesan cheese
Stock

I put frozen bell peppers in pieces together with a few pieces of tomatoes in a pan, cooked with stock, and added the herbs. When they were nice and soft, I put them in a blender and added a little bit of cheese.

You can make this a lot yummier adding some fats, but I still need to stay lower with the calories for a week. This added maybe 100 calories to the meal, but made chicken breast way more tolerable. And I was gonna have a serving of veggies either way.

Next time I’ll try adding a little less liquid to make it thicker. I think it’ll come out better.
