Hello everybody! It’s been a busy few weeks since I last stopped-by. Here-goes:
Charcuterie plate (son’s bday party)
Left to right: grilled zucchini, sautéed shiitakes with cognac, caramelized onions, grilled pork tenderloin slices. This was part of the sandwich station at my sons bday party.
Top to bottom: grilled asparagus, filet mignon, sautéed gulf snapper, zuchini noodles (zoodles!) with mornay sauce.
roasted fennel with Parmesan.
Seared scallops topped with scallop ceviche, radishes, cucumber, and cilantro, in a chilled tomatillo-habanero sauce with garlic oil.

sautéed grouper over a bed of zuchini hash browns with bacon.
And now for a few pics of food that I did not prepare:
surf and turf; filet and lobster.
hamachi crudo with fresh coconut and avocado sorbet.
marinated Japanese eggplant with miso and mayo-duo.
tomato brûlée with baba ganoush, buffalo mozzarella with cilantro purée and cilantro micro greens.
Pan seared dorade with crispy lotus root, peas, greens, and roe. (I don’t remember the sauce)
flat iron steak smoked over fir, with potato purée, marinated vegetables, Demi-glace, and bone-marrow brûlée.
braised beef short rib with pickled mustard green and turnip cake, braised mustard greens, onion straws, and braise liquid reduction.
Ouefs de mayonnaise; soft boiled egg with garlic mayonnaise, trout roe, bacon, and maple syrup.
